Use your Toaster Oven to preserve your garden Bounty

I plant a large garden every year and I always try to use as much product as possible. Part of that means preserving things for use during the winter. I love looking at my dinner table in mid-January and still see food from my garden. Here are some ways that I use my Toaster Oven to help.

«Dried herbs

I love fresh herbs and always grow lots of them, basil, thyme, Rosemary, chervil, oregano and Mint are some of my favorites. They, of course, taste best when they are fresh and just plucked. But I think the drought a few of the extra herbs to use during the low season.

First warm your Toaster Oven to 200 degrees f. then remove the leaves from the clean, dry fresh herbs. Evenly in the herbs over a bakery pan lined with parchment paper. Baking pan in the Toaster Oven and turn off the oven. Check them for 1 hour. Herbs should be completely dry and crumble at the touch of a button. If not, heat the oven to 200 degrees F back. yield herbs, turn off the oven and check in 30 minutes. Repeat if necessary. Store the dried herbs in an airtight container in a dark place.

Oven dried tomatoes

I love the sun dried tomatoes, but they can be quite expensive. I do something similar in my Toaster Oven. First warm your oven to 200 degrees f. Wash your tomatoes and cut them in half. Place the tomatoes, cut page, in a bakery are lined with parchment paper. Sprinkle with a fair amount of sea salt.

Bake for 3 hours. In the end, tomatoes red deep and about 1/4 of their original size. Place them in a glass jar and up with extra virgin olive oil. Store in refrigerator.

Dried Chile pepper

I love cooking spicy food, so I grow lots of chile pepper annually. I dry usually about half of them throughout the winter and spring. This method works for all types of chile pepper, although the time required for drying depends on the type of pepper used.

You need a Toaster Oven with a low temperature for this task, about 100-120 degrees F; often this temperature is achieved by a "warm" setting. If your Toaster Oven not go this low, one of you just cooking peppers which do not preserve them at all.

Heat the oven. Wash the peppers and remove the stems. Place them on a bakery are lined with parchment paper. Place them in the oven Toaster. Flip the peppers over 30 minutes until they are completely dry. This will take from 1 to 6 hours depending on size and moisture content of your peppers.

Store chilled, dried peppers in an airtight container in a dark place.
