Use your Toaster Oven to preserve your garden Bounty

I plant a large garden every year and I always try to use as much product as possible. Part of that means preserving things for use during the winter. I love looking at my dinner table in mid-January and still see food from my garden. Here are some ways that I use my Toaster Oven to help.

«Dried herbs

I love fresh herbs and always grow lots of them, basil, thyme, Rosemary, chervil, oregano and Mint are some of my favorites. They, of course, taste best when they are fresh and just plucked. But I think the drought a few of the extra herbs to use during the low season.

First warm your Toaster Oven to 200 degrees f. then remove the leaves from the clean, dry fresh herbs. Evenly in the herbs over a bakery pan lined with parchment paper. Cooking perfect Japanese rice without a rice cooker

Japanese rice is great! I eat it with everything these days, even things that you would not expect to go with it. It is truly versatile and has replaced bread and potatoes for me as my artificial staple fibres carbohydrates.

That is delicious, contrary to popular belief, it is also really easy to cook perfectly! You don't need a fancy rice cooker that excellent Japanese rice (though they are great for keeping your rice warm so you can eat it later).

Here is how I fix Japanese rice in the absence of a rice cooker. It takes about 5 minutes of preparation and 25 minutes to cook.

1. Standard measurement of rice is of Cup. Japanese rice cups hold 180 ml, which is approximately the size of a small Mug. A Cup will earn a person, so measure your parts accordingly. Place as many cups of rice as you need in an ordinary saucepan.

2. Next, you need to wash the rice. Pour in some water and shake and scrunch rice with his hands. The water is fast a milky white. When this happens, pour water in the sink, is careful not to all the rice. I do so usually by deposit in saucepan and use my hand as a barrier of sorts. You do not need to get rid of all the water, only a reasonable amount.

Shamu Datsi

(Bhutanese chili cheese and mushroom dish)

Shamu Datsi ingredients

What you need:

1 lb Shitake mushrooms or (major Oyster Mushrooms, Chanterelle mushrooms)
2 cups water
2-3 slices of Kraft singles, or better yet of Amul products cheese that can be found on Indian markets
2 oz of mild cheddar cheese. cut into pieces
2 red or green pepper, chilli, sliced thinly (julienne)
1/2 yellow onion, sliced thin (julienne)
4 cloves fresh garlic, finely chopped
1 Tablespoon fresh ginger, finely chopped
1 Teaspoon butter
1/2 Teaspoon salt

To prepare:

Wash and cut the ends of the mushroom, and then drag in halves or quarters, depending on the size of fungi you mushroom chooses. Combine all ingredients except for cheese and chili in a pint size sauce pan. Cook over medium heat until the mushrooms are cooked in full, 15-20 min. Add chili and cheese. Do not touch the cheese in, let alone melt and then stir a little and you're done. Serve over Jasmine or brown rice.

Korean barbecue ~ Bulgogi

What you need:

1 1/2 kg of the rib eye steak or other types of beef ~ Ask the butcher to slice the paper thin
2 carrots julienne
Green, yellow, red paprika (3) wide sliced
2 cloves garlic, finely chopped
2 teaspoons fresh ginger root, finely chopped
Tablespoon of vegetable oil or butter
1/2 Yellow onion, sliced thin
Sauce: Annie Chun Korean barbeque sauce, in the Asian part of the whole foods market, savory sauces

To prepare:

Marinate meat for at least 1 hour, or preferably overnight in Korean barbeque sauce, ginger and garlic. In a large frying pan, FRY onions in oil or butter until the onion is a light brown. Then add meat, Cook on high heat until the with/meat cooked full, 15-20 min. Then stir in the peppers and cook for another 5-7 min. Server over Jasmine Rice or brown rice.

Quick and easy Egg Drop soup

What you need:

1 bag of Chinese style ~ egg Flower soup Mix ~ Hot and sour
2,5 cups water
1 bunch bok choy
1 egg
1/2 package of frozen fried fish cakes, pre-
1 Tbs of soy sauce (optional)

To prepare:

Add to all content in the soup mix package into 2,5 cups water and fish cakes. After 5 minutes, gradually add a well-beaten egg and then add the chopped bok choy and let it boil for 2-3 minutes. Serve hot!

Basics for marinating

I know. It is difficult to remember to defrost something, not to mention to whip up a marinade. I am with you. But I must admit, that when we invited some friends over for a barbecue, and my husband downloaded a shish kabob recipes required for marinating, I thought, what the heck. If you're like us, clean we so much before friends will. If you are going to do all that work, you can also go all out on cooking, too.

Perhaps the most fundamental of marinating it is a verb. Physically place the meat, vegetables and fruit in a flavored liquid and drag it to a few hours or overnight. A marinade with a'd ' is a noun or the liquid in which food is the cotton cloth. Marinades consists of an acid base, such as lemon juice, vinegar, yogurt, beer or wine. Finally, here is a way to use up the remaining, aging the wine on the back of the frig.

When planning to take your meals in a Marinade, do not use an aluminum pan, unless you like your food a metallic taste. Acid in base above will react to metal in the shape. A Glass is best, but a plastic bowl works well, too.

Your acidic base, adding any oil and various seasonings. It is therefore in a pinch, an oil and vinegar dressings can come in handy. Choose your favorite Spice combinations, add a rub you like (someone else has made to choose for you), or make sure you have plenty of Italian units on more common flavorings include. soy sauce, honey, onions (scallions) or garlic. The key to time, when marinating, is where the meat is at room temperature or not. Chicken can take up to four hours to marinate, if kept in the refrigerator all the time. If you marinate at room temperature, soaking takes approximately one hour. Some people don't plan as the idea of keeping meat of a refrigerator at any time, so accordingly. If you are using large pieces of meat tenderizing harder, with a marinade can take up to two days in the frig.

A final word of warning, do not use the marinade to baste your meat. Why? For the same reason you do not eat raw meat. Juices from raw meat in the marinade. However, you can heat marinade on the stove in a saucepan and not let it go to waste. To a boil and then simmer on medium-low, approximately ten minutes. Bleached and unbleached flour

There are many different types of flour, but most people must often choose between bleached and unbleached flour.

Bleached flour is more white and finer. It contains a chemical bleaching agent to clean up much faster than unbleached. Miller argues that the chemical is added not only reduce aging period, but also improves the structure and stiffens the bleaching agent, but if accelerate the ageing time they certainly also faster revenue from the sale. I recently switched from using bleached flour to unbleached flour in all I baked for the entire week. I have found that the delicate pastries and yeast bread is much better with unbleached flour. My cream puffs are kept well together and also increased perfectly. In heavier things like cookies and waffles, however, I do not notice a difference. Therefore, I will continue with just the unbleached flour because of higher nutritional value of protein content and since I haven't been eating chemical additives. I recommend to all bakers are trying with this!

There is one exception, and it is cake flour. This type is chlorinated to the finished product has a tight shape and structure. Using unbleached flour in a recipe that requires cake flour does not give equal results. It can be done, but the baked unbleached flour cause good lack stiffness and it can fall apart.

Some of my favorite things-Kitchen Gadgets

Here are some of my favorite "Kitchen" things:-

Vacuum sealed lid opener

This gadget is a heavy "beer bottle opener" look-alike, except that it comes in bright colored plastic. You use the gently powerful leverage ability under the edge of a vacuum sealed jar and the "pop" small indentation seal in the center of the lid. This makes the smallest drill tip action to open a jar that had previously only "openable" of strong hands (which is a very problematic action if you have "grip" or "twist" problems with hands-particularly in arthritic and/or legacy situations).

Miniature GRATER

This is the same rectangular "box" shape with the handle at the top, as his "big brother", regular cheese/carrot GRATER-but-this "mighty mini" River chocolate or small quantities of Peel ... or ginger ... or fresh coconut ... or perhaps a small amount of Parmesan cheese. It is a dynamo of a midget guise. So handy and tucks a corner of a box or in the smallest space, anywhere.

Just a warning-watch your fingers! This baby can be small ... but the bite!

Pizza Cutter & Server

Now I've had this great red and white plastic "job" in the year. Bought from a cheap shop for your basic "peanuts"-it has been fantastic. At one end is a roller cutter "blade"-in plastic? (Yes ... and it cuts through pizza bases and each filling operation, just like a dream).

At the other end is a Trowel-shaped plate server and a "pusher" as you move up with the thumbs while keeping the "gadget". Inserting the server portion of the pizza, lifting it onto a plate and then simply push the slider button ... and ...

Voila! ... the images of perfect every time!

Citrus Zester Skin

I know, I know ... we can grate the rind on our regular GRATER ...But ... sometimes, you need only a little, or if you are too lazy to go fossicking in the cupboard ... whatever. So this is hand-held-a nice chubby Rubberized handle makes it a cinch to grasp and scrape down the skin of an orange or lemon, in second place. It has these little cut-out-rings in the top end and the rind cuts in long thin strips. And it also has a small "gouger" cutting or digging out all stains. What the ripper!

Tea Bag Squeezer

Small stainless steel tongs with holes in the rectangular plate "seaweed"-so you can extract tea bag from the cup and squeeze out short enough so it doesn't drip everywhere. So simple ... so effectively. No more steamed or burned fingers ... yippee!

Spaghetti "Lifter"

Well-ll ll ...I do not know what to call it, in addition to an excellent invention. It is a stainless steel "soup low-quality look-alike"-except that it has a hole in the Bowl (to boil water flows) and approximately ten "fingers" or "claws" pointing up, so you can just dip in the large pan cooked spaghetti, and scoop out heaps, and do not run back into the water! You can actually "capture" all "thread". Magic!

Meatball "Mover and Maker"

I saved a Lastly-although it is the newest kid on the block. It has the same chunky Rubberized handle as the last ... again, very comfortable and non-slip of the hand. It looks like a small icecream scoop ...BUT ... it has an additional bit of metal that begins with a lever on the handle with one that applies to the opening page at the bottom of the scoop. Ease the pressure with your thumb on this lever makes the "sticky" Meatball simply plop "out" ...Each time, with no problems. I just love it.

I have a "negative" about these gadgets. Where were these inventions in the years when I "cooking up a storm" for her fiancé, and three children--all with ample farm appetite?

Reduce spreads through allowances

When I talk about dairy, that means something made with milk, including butter, cheeses, creams, half & half, milk, buttermilk and yogurt. These are the worst calorie butter culprit with 80% milk fat content. This fat is often not just like a preservative and flavour enhancer in other articles, but as a fundamental element in the baking process.

If you usually eat packaged cookies and bakery items, chances are you consume much fat calories of butter in these baked items. Similarly, we take for granted the little klickarna butter which we use on toast or bread, hot pancakes, potatoes and vegetables. Butter is not just fat, calories, but also very salt.

If you eat out, it is hard to control the fat and salt content is already mixed up for processed foods. Keep in mind that they can use hydrogenated oils, butters, or even. You will find often the fat content in your favorite chain restaurants either online or by asking someone for a table of contents on the restaurant. I should warn you that you might be discouraged from ever eat it again when you locate the truth of the contents. Learning in food often makes me think of the expression, "Ignorance is bliss."

I find it extraordinary gooey fat offensive. I can almost feel my hip is expanding as I chew.

When a recipe for heavy cream with 36% to 40% milk fat, can I use the whipping cream or half and half, which can vary between 10-18% milk fat. You can also use a cup condensed milk 4% milk fat, instead of an equal amount of half and half and thus reduce the fat in significant amounts. Substitute light cream, low-fat cream cheese or low-fat yogurt in recipes calling for sour cream, cream cheese, or yogurt. I have found that there is little difference in taste and texture. Use a slightly fat yoghurt can be problematic, however.

Don't feel obligated to follow a recipe exactly, especially if there are any baking. I have had much luck with lower fat substitutes also with baking. I use reduced-fat cottage cheese (1-2% milk fat), which I Mash with a fork instead of sour cream (18-20% milk fat), when you make bread. I think I better results. And when it comes to salt, because even the reduced fat butters has salt in them, I often include not salt in a recipe that requires it.

To reduce the intake of fat and salt is not a problem now, it can become in the future. If better habits while you are young, the middle-aged spread, which is just around the corner. If anything, I believe, to reduce the fat and salt will help you to taste the other ingredients so much more and give them a taste buds more of a work out.

Using the cast iron Skillet or frying pan

One of the first things you should remember when you use a cast iron skillet or frying pan, you have to add something cool to never liquids in a very hot cast iron fry pan or skillet, if you do, then the result may well be that the shape is cracked and rendered completely useless.

The Interior can also be enameled if you wish, this removes the need for seasonal shape but will not affect the excellent heat properties of cast iron. The only draw back from this is that there is no per-minute amounts of iron leached in your food, something that most of us need. If you want to reduce your iron intake, then an enameled pan is probably the best option for you.

Cooking with sugar syrup: a Guide

Consider cooking with syrup if you want to avoid using regular sugar in your recipe. Some of these syrups are natural and the could play an important role in cooking sweet dishes or baking. We will look at the 5 essential syrups:

Syrups

Syrup is a by-product of the refining of sugar and it is from concentrated liquid white sugar. Another variant is the dark syrup which is obviously less refined, darker in color and has a stronger taste.
